Casa Pareja. Olive oil from organic farming

A Family's Tradition
Since the end of the Nineteenth Century Molina family runs the farm house couple, producing virgin olive oil from its crops.

Nowadays, the fifth generation is leading the property towards sustainable agriculture.

The Farm
The property is located in Casa Pareja Jumilla, in the South east of Spain, 400 meters above sea level. There's scant rainfall and a high daily average sunshine.

There are 350 acres (865 th.acres) where we grow organic olive-trees, wild olive-trees, vines and creals. We also cultivate almond-trees, fruit-trees and vines at nursery, but organic standards yet.

The olive-tree varieties we grow are "Cuquillo" and "cornicabra" and we are renewing and completing plantations with "Arbequina". We also grow different varieties of smallholdings testing as "picual", "hojiblanca" and others.

The annual production is about 35,000 liters of oil.

Integral sustainable agriculture project
Young House is developing an integrated project respecting the sustainable agriculture The environment, growing recycling by-products and also oil production residues (alpeorujo).

We use compost as a spin-off pruning, alpeorujo and animal manure to get humus. Later on we add this compost to enrich soil, we use olive pips as fuel and we are even experimenting with producing craft soap from olive oil.

The Oil Mill
The ancient oil mill has been moved to the country place, restoring an eighteenth century straw loft. In the modern plant the philosophy of oil production remains loyal to tradition:
- Neat to get good organic growing olives.
- Careful harvesting in the right time.
- Daily fresh olive milling.
- Cold extraction.
- Natural pour off without filtering.
- Storing in a clean, quiet place, keeping stable temperature.

The Olive Oil
We get a natural golden green oil, the juice of just harvested ripe olives, with intense flavor, and an apple touch, smooth in your mouth, ending in a slightly hot taste.

Extra quality, and the acidity around 0.4 or are the result of a neat elaboration.
