Measure of the increase in the concentration of glucose (a sugar) levels as a result of a specific carbohydrate consumption (food that contains sugar) compared to eating a normal amount of glucose. Foods with high glycemic index release glucose quickly and cause a rapid rise in blood glucose. Foods with low glycemic index release glucose slowly into the blood. The relationship between high glycemic index and recurrent colorectal cancer is under study.
